Ingredients
  

For the Salmon:

  • 2 salmon fillets (skin-on or skinless)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon olive oil

For the Creamy Tuscan Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup sun-dried tomatoes chopped
  • 1 cup fresh spinach
  • 1 tablespoons fresh basil chopped

Instructions
 

Cook the Salmon:

  • Season the salmon fillets with salt, black pepper, and paprika.
  • Heat olive oil in a large skillet over medium-high heat.
  • Place the salmon fillets skin-side down and sear for 3-4 minutes per side until golden brown. Remove from the pan and set aside.

Make the Creamy Tuscan Sauce:

  • Reduce the heat to medium-low and melt butter in the same skillet.
  • Add minced garlic and cook for 30 seconds, until fragrant.
  • Pour in chicken broth and let it simmer for 2 minutes.
  • Stir in heavy cream, grated Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2-3 minutes until slightly thickened.

Add the Spinach & Tomatoes:

  • Stir in the sun-dried tomatoes and let them soften in the sauce.
  • Add fresh spinach and cook until wilted (about 1 minute).

Combine & Serve:

  • Return the seared salmon fillets to the skillet and spoon the sauce over the top.
  • Let the salmon simmer in the sauce for 2 minutes to absorb the flavors.
  • Garnish with chopped fresh basil and serve immediately.
