Ingredients
  

  • 2 ripe bananas (mashed)
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 tablespoon sugar (optional)
  • 1 large egg
  • ¾ cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter (or oil)
  • ¼ teaspoon salt
  • Maple syrup and fresh fruit (for serving)

Instructions
 

Mix the Dry Ingredients:

  • In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, and sugar (if using).

Mash the Bananas & Mix Wet Ingredients:

  • In another bowl, mash the bananas until smooth.
  • Add the egg, milk, vanilla extract, and melted butter. Stir well.

Combine Wet & Dry Ingredients:

  • Pour the wet ingredients into the dry ingredients.
  • Stir until just combined—don’t overmix!

Cook the Pancakes

  • Heat a non-stick skillet or griddle over medium heat.
  • Lightly grease the pan with butter or oil.
  • Pour ¼ cup batter per pancake.
  • Cook for about 2 minutes, until bubbles form on top, then flip and cook for another 1-2 minutes.

Serve & Enjoy!

  • Stack the pancakes and top with maple syrup, fresh fruit, or nuts.
