For the Honey Garlic Sauce:

  • 2 tablespoons butter
  • 4 cloves garlic minced
  • ¼ cup honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon red pepper flakes (optional)

For the Roasted Vegetables:

  • 1 zucchini sliced
  • 1 red bell pepper chopped
  • ½ cup broccoli florets
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

Season & Cook the Chicken:

  • Pat the chicken breasts dry with a paper towel.
  • Season with salt, pepper, paprika, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat.
  • Cook the chicken for 5-6 minutes per side until golden brown and fully cooked.
  • Transfer to a plate and set aside.

Roast the Vegetables:

  • Preheat the oven to 400°F (200°C).
  • Toss the zucchini, red bell pepper, and broccoli with olive oil, salt, and pepper.
  • Spread on a baking sheet and roast for 15 minutes until tender and slightly caramelized.

Make the Honey Garlic Sauce:

  • In a small saucepan, melt butter over medium heat.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Stir in honey, soy sauce, apple cider vinegar, and red pepper flakes.
  • Simmer for 2 minutes until slightly thickened.

Glaze & Serve:

  • Return the cooked chicken to the skillet.
  • Pour the honey garlic sauce over the chicken and coat evenly.
  • Simmer for 1-2 minutes to allow the flavors to infuse.
  • Serve hot with roasted vegetables on the side.
