Ingredients
  

For the Wraps:

  • 2 large eggs
  • 2 whole wheat tortillas (or gluten-free wraps)
  • 1 cup fresh spinach chopped
  • ¼ cup crumbled feta cheese
  • 1 small avocado
  • 1 olive oil
  • 1 garlic clove minced
  • ½ red pepper flakes (optional)
  • Salt and pepper to taste

Optional Add-Ons:

  • Cherry tomatoes halved
  • Pickled red onions
  • Hot sauce

Instructions
 

Sauté the Spinach:

  • Heat olive oil in a skillet over medium. Add garlic and sauté 30 seconds until fragrant.
  • Add spinach and cook 1-2 minutes until wilted. Season with salt, pepper, and red pepper flakes.

Scramble the Eggs:

  • Whisk eggs in a bowl with a pinch of salt and pepper.
  • Pour into the skillet with spinach and cook, stirring gently, until softly scrambled (~2 minutes).

Prep the Avocado:

  • Mash avocado in a bowl with a pinch of salt and a squeeze of lemon juice (optional).

Assemble & Toast:

  • Warm tortillas in the skillet or toaster for 20 seconds.
  • Spread smashed avocado on each tortilla. Top with scrambled eggs, spinach, feta, and optional add-ons.
  • Fold sides of the tortilla inward and roll tightly. Optional: Return wraps to the skillet seam-side down for 1-2 minutes to crisp.

Serve:

  • Slice wraps in half diagonally. Serve with hot sauce or extra avocado.
