Ingredients
  

  • 1 large whole wheat tortilla
  • 2 eggs
  • ½ cup fresh spinach
  • 2 tablespoon crumbled feta cheese
  • 1 tablespoon milk
  • ½ teaspoon olive oil
  • Salt & black pepper (to taste)

Instructions
 

Prepare the Eggs:

  • In a small bowl, whisk together the eggs, milk, salt, and pepper.

Cook the Spinach:

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add fresh spinach and cook for 30 seconds, until wilted.

Scramble the Eggs:

  • Pour the egg mixture into the pan with the spinach.
  • Cook gently, stirring occasionally, until the eggs are soft and slightly set.
  • Remove from heat and stir in feta cheese.

Assemble the Wrap:

  • Warm the whole wheat tortilla in a dry pan for 10 seconds per side.
  • Place the egg mixture in the center and roll into a wrap.

Serve & Enjoy:

  • Cut in half and serve warm.
